
Summer Salad Platter with Crispy Butter Beans & Garlic Aioli

Summer is the time when you crave a big fresh salad platter. With that in mind, our chefs have created a sensational one with pumpkin wedges, fresh lettuce leaves, crispy butter beans and plenty of veggies. It’s all topped off with soft boiled eggs and an olive dressing to make the perfect summer salad.
Ingredients
Pumpkin
- 600g potatoes, cut into wedges
- 1 drizzle of oil
- 600g pumpkin wedges
Olive Dressing
- 1 Tbsp mustard
- 1 1/2 Tbsp vinegar
- 1 drizzle of olive oil
- 1 pack herb & garlic green olives, roughly chopped
To Serve
- 200g garlic aioli
- 3 tomato, cut into wedges
- 1 twin pack baby cos lettuce, leaves separated
Butter Beans
- 1 drizzle of oil
- 2 can butter beans, drained & rinsed
- 300g green beans, ends trimmed
Eggs
- 1 pack eggs (6 pack)

Preheat oven to 220°C (or 200°C fan bake). Cut potatoes into wedges. Trim ends from green beans. Drain and rinse butter beans. For extra crispy butter beans, pat dry before baking! Toss both beans with oil on a lined oven tray and season with salt and pepper.

Toss pumpkin and potatoes with oil on a second lined oven tray and season with salt and pepper. Roast on upper rack in oven for about 25 mins, until golden. Roast green beans and butter beans on lower rack in oven for about 15 mins, until golden and crispy.

Place eggs in a medium pot and cover with water. Bring to the boil, reduce to a simmer and cook for 3 mins. Drain and cool under cold tap, then peel and halve.

Roughly chop olives and mix in a small bowl with olive oil, vinegar and mustard. Separate lettuce leaves and cut tomato into wedges. Put all aside.

Spread garlic aioli onto the base of a platter. Cover with lettuce and tomato. Top with pumpkin, potatoes, beans and eggs. Drizzle over olive dressing. Grab a plate and help yourself!
