Thai Chilli Beef Salad with Coconut Sprinkle

You'll love it in this stylish and healthy stir-fry-esk salad which, thanks to pre-cut meat and no carb, is fast to prepare. This salad comes together with a punchy little Thai chilli dressing and a sprinkle of coconut!
Ingredients
Beef
- 1/2 tsp oil
- 1/2 tsp red curry paste
- 150g beef stir-fry
Salad
- 25g Thai chilli dressing
- 1/2 Lebanese cucumber, cut in half lengthways & thinly sliced
- 1 tomato, diced 1cm
- 1/2 capsicum, thinly sliced
- 1/2 baby cos lettuce, leaves separated
- 50g julienned carrot
To Serve
- 1/4 pack coconut thread

Cut cucumber in half lengthways and thinly slice and dice tomato. Thinly slice capsicum and separate lettuce leaves. Set all aside separately.

Pat beef dry, season with salt and toss in a large bowl with curry paste. Heat oil in a large frypan on high heat. When pan is very hot add beef and cook for 1-2 minutes, or until just cooked. Remove from heat and set aside.

Cucumber, tomato, capsicum, lettuce and carrot in bowls with beef. Drizzle over Thai chilli dressing and sprinkle over coconut.
