Chicken, Peach and Cream Cheese Pizzas with Lettuce Slaw

Peach adds a summery and sweet taste to these delicious mid-week pizzas!


Ingredients

CHICKEN, PEACH AND CREAM CHEESE PIZZAS

  • 400g chicken thighs
  • 2 teaspoons chicken spice mix
  • 3 pizza bases
  • 210g pizza sauce
  • 2 cups grated Colby cheese
  • 2 peaches, sliced into 1cm wedges
  • ½ red onion, thinly sliced (optional, adults)
  • ½ tub cream cheese

LETTUCE SLAW

  • ¼ teaspoon mustard (e.g. Dijon, wholegrain)
  • 3 tablespoons mayonnaise
  • 1 teaspoon vinegar (e.g. red wine, white wine)
  • 1 baby cos lettuce
  • 1 apple
  • 2 carrots

Steps

  1. oven to 220°C. Preheat two oven trays (or pizza stones if you have them).
  2. Pat chicken dry with paper towels and cut into 1cm-thick strips. Sprinkle over chicken spice mix to coat chicken.
  3. Heat a drizzle of oil in a large fry-pan on high heat and cook chicken for about 1 minute each side, until golden but not cooked through (chicken will continue cooking in step 3). Set aside.
  4. Lay two sheets of baking paper on the bench. Cut one pizza base in half and place one and a half bases on each sheet of baking paper. Evenly spread pizza sauce over bases and sprinkle with cheese. Top pizzas with chicken, peaches and onion (if using), use a teaspoon to dot over cream cheese and season.
  5. Carefully lift baking paper with pizzas on top and place on preheated oven trays (or pizza stones) then carefully slide baking paper away (use a fish slice to help with this). Cook pizzas for 10-12 minutes, until cheese is melted and pizzas are golden. Swap trays half way through cooking to ensure even cooking.
  6. While pizzas are cooking, whisk mustard, mayonnaise and vinegar together in a large bowl. Finely slice lettuce; cut apple into thin slices then into matchsticks; peel and grate carrots. Add all to bowl with mustard mayonnaise mix and toss to combine. Season to taste.
  7. Slice each chicken, peach and cream cheese pizza into 6-8 pieces and divide between plates. Serve lettuce slaw on the side.
