Kiwi As Beef Patties with Hand-Cut Chips & Garlic Aioli

Juicy grilled beef patties served with handcut chips and a refreshing beetroot salad. All topped off with classic garlic aioli. A great recipe to have as it starts getting warmer!


Ingredients

To Serve

  • 200g garlic aioli

Beetroot

  • 2 carrot, grated
  • 1 beetroot, grated
  • 1 1/2 tsp honey
  • 1 1/2 Tbsp vinegar
  • 1 1/2 tsp mustard

Onion

  • 1 1/2 brown onion, thinly sliced
  • 1 drizzle of oil

Salad

  • 3 tomato, thinly sliced
  • 1 twin pack baby cos lettuce, roughly chopped

Patties

  • 1/2 brown onion, finely diced
  • 900g beef mince
  • 1 cup panko breadcrumbs
  • 1 pack Kiwi spice blend
  • 1 egg
  • 3 Tbsp tomato sauce
  • 1 tsp salt
  • 2 tsp mustard, optional
  • 1 drizzle of oil

Chips

  • 1200g potatoes, cut into chips
  • 1 drizzle of oil

Steps

  1. Preheat oven to 230°C (or 210°C fan bake). Cut potatoes into chips. Toss on 2 lined oven trays with oil and season with salt and pepper. Roast until golden and tender, about 25-30 mins. Swap trays halfway for evenly cooked chips!
  2. Finely dice first measure of onion. Mix in a medium bowl with remaining patties ingredients (except oil). Divide mixture into 9 balls, then flatten into patties, about 1 cm thick. Set aside on a plate/tray.
  3. Heat oil in a large frypan on medium-high. Cook patties in batches until brown and cooked through, about 4-5 mins each side. Add more oil between batches if needed.
  4. Thinly slice remaining onion. Heat oil in a second large frypan on medium-high. Cook onion until softened, about 5 mins.
  5. Grate carrot and beetroot. Add to a large bowl with honey, vinegar and second measure of mustard. Season with salt and pepper. Thinly slice tomato and roughly chop lettuce. Build your bowl with kūmara chips, patties and all of the fillings smothered in aioli!
