Turkish-Style Beef Bowl with Poppy Seed Pilaf & Muhammara Sauce

Brace your tastes buds for savoury beef mince over poppy seed pilaf with muhammara sauce. Packed full of flavour, this is a vibrant dish inspired by Turkish flavours.


Ingredients

To Serve

  • 2 Tbsp muhammara
  • 2 Tbsp yoghurt

Beef

  • 50g baby spinach
  • 1/4 tsp salt
  • 1/2 pack Turkish spices
  • 300g beef mince
  • 1 drizzle of oil
  • 1/2 carrot, grated
  • 1/2 brown onion, finely diced

Cauliflower

  • 1/2 pack sliced almonds
  • 1 drizzle of oil
  • 1/4 pack Turkish spices
  • 1/4 cauliflower, cut into small florets

Pilaf

  • 1 1/8 cup chicken stock
  • 1 pack coconut & poppy seed spices
  • 150g basmati rice

Steps

  1. Preheat oven to 220°C (or 200°C fan bake).
  2. Combine rice, coconut & poppy seed spices and stock in a medium pot and bring to the boil with the lid on. Once boiling, reduce to lowest heat to cook for 12 minutes. Turn off heat and steam, covered, for 5 more minutes. Do not lift lid during cooking.
  3. Cut cauliflower into small florets and toss with first measure of Turkish spices and oil on a lined oven tray. Season with salt and pepper. Roast for an initial 15 minutes, then add almonds and return to oven to cook for a further 5 minutes, until golden and tender.
  4. Finely dice onion and grate carrot. Heat oil in a large frypan on high heat. Cook onion, carrot and beef for 5-6 minutes, until browned. Add second measure of Turkish spices and salt and cook for 2 minutes, until fragrant. Add spinach, stir through to wilt and season to taste with salt and pepper.
  5. Pilaf topped with beef, cauliflower, muhammara and yoghurt.
