15-Minute Sri Lankan Beef Sirloin Steaks with Cucumber, Bok Choy & Coconut Sambal

Take your taste buds on a trip to Sri Lanka tonight with this delightful dish. Precooked rice and a carefully crafted Sri Lankan-spiced curry sauce take all the hard work out of this 15-minute meal.


Ingredients

Sauce & Rice

  • 1 pack Sri Lankan curry sauce
  • 1 pack precooked coconut rice

Salad

  • 1 Lebanese cucumber, cut in half lengthways & thinly sliced
  • 1 twin pack baby bok choy, thinly sliced
  • 1 1/2 tsp rice wine vinegar
  • 1 pack coconut thread
  • 1 pack crispy shallots

Beef

  • 1 drizzle of oil
  • 300g beef sirloin steaks
  • 1/2 pack Sri Lankan spices

Steps

  1. Heat oil in a large frypan on medium-high heat. Pat beef dry, season with salt and toss with 1/2 pack Sri Lankan spices. Cook for 2-3 minutes each side for medium-rare (depending on thickness), or until cooked to your liking. Set aside, covered, to rest before slicing thinly. Reserve pan.
  2. Cut cucumber in half length ways and thinly slice. Thinly slice bok choy. Toss in a medium bowl with vinegar. Top with coconut thread and crispy shallots.
  3. Return reserved pan to medium heat and add Sri Lankan curry sauce. Heat for about 2 minutes, until warmed through. Season to taste with salt. Meanwhile, squeeze rice in pack to separate grains. Tear top and microwave in pack for 3 minutes.
  4. Rice topped with beef, any resting juices, sauce and salad.
