BBQ Plum-Glazed Venison Meatballs with Asian Rice Salad

Ingredients

ASIAN RICE SALAD

  • 1½ cups jasmine rice
  • 2¼ cups water
  • ½ bag sugar snap peas
  • 1 carrot
  • ½ capsicum
  • 2 tablespoons soy sauce
  • Juice of ½ lemon
  • 1-2 tablespoons mild sweet chilli sauce
  • ½ clove garlic, minced
  • 1cm ginger, peeled and finely grated

BBQ PLUM-GLAZED VENISON MEATBALLS

  • 600g venison and beef mince
  • 2 tablespoons venison spice blend
  • 1 courgette, grated
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon salt
  • 100g BBQ plum sauce

TO SERVE

  • 1-2 spring onions, finely sliced

Steps

  1. oven grill to high. Preheat BBQ hot plate to high (if using).
  2. Combine rice, water and a pinch of salt in a medium pot and bring to the boil. As soon as it boils, cover with a tight-fitting lid and reduce to lowest heat to cook for 12 minutes. Turn off heat and leave to steam, still covered, for a further 8 minutes. Do not lift lid during cooking.
  3. Combine all BBQ plum-glazed venison meatball ingredients (except plum sauce) in a medium bowl and use clean, damp hands to form mixture into golf ballsized balls. Heat a drizzle of oil in a large oven-proof fry-pan on medium-high heat and cook meatballs, in batches, for 5-6 minutes, until browned.
  4. Remove pan from heat and drizzle BBQ plum sauce over meatballs. Place on top rack of oven and grill for 1-2 minutes, until meatballs are glazed and cooked through.
  5. While meatballs are cooking, prepare veggies. Finely slice sugar snap peas; grate carrot; remove core and seeds from capsicum and dice 1cm.
  6. Once rice has finished steaming, add all remaining rice salad ingredients to pot with rice and gently mix to combine. Season to taste with salt and pepper.
  7. Divide Asian rice salad between bowls or plates and top with BBQ plum-glazed venison meatballs. Sprinkle over spring onions.
