Chicken and Cranberry Pizzas with Salad

Quick and tasty chicken cranberry pizzas!


Ingredients

CHICKEN AND CRANBERRY PIZZAS

  • 1 red onion, thinly sliced
  • 70g tomato paste
  • 1 tablespoon olive oil
  • 2 teaspoons water
  • 100g GF cranberry sauce
  • 350g smoked chicken breasts
  • 3 GF pizza bases
  • 1½ cups grated Colby cheese
  • ½ capsicum, core and seeds removed and diced 1cm

SALAD

  • ½ telegraph cucumber
  • 1 tomato
  • ½ capsicum
  • 1 baby cos lettuce

Steps

  1. oven to 220°C. Preheat two oven trays (or pizza stones if you have them).
  2. Heat a drizzle of oil in a medium fry-pan on medium-high heat. Cook onion for about 3 minutes, until softened.
  3. While onion is cooking, mix tomato paste and olive oil in a small bowl. Add water to pottle of cranberry sauce and stir, until sauce has thinned out. Dice chicken 1cm. Set all aside.
  4. Cut one pizza base in half. Lay two sheets of baking paper on bench and place one and a half pizza bases onto each sheet. Divide tomato mixture between bases and evenly spread to cover. Sprinkle over cheese, cooked onion, chicken and capsicum. Dollop over cranberry sauce and season.
  5. Carefully lift baking paper with pizzas on top, place one and a half pizzas on preheated trays (or stones) then carefully slide baking paper away (use a fish slice to help with this). Cook pizzas for about 14 minutes, until bases are crisp and golden around the edges. Swap trays halfway through cooking.
  6. While pizzas are cooking, make the salad. Cut cucumber in half lengthways then thinly slice; dice tomato 1cm; remove core and seeds from remaining capsicum and dice 1cm; roughly shred lettuce. Add all to a medium bowl with a drizzle of olive oil and season with salt and pepper. Toss to combine.
  7. Cut pizzas into wedges. Place a few pieces onto each plate and serve salad on the side.
