Pistachio & Cranberry Stuffing Balls with Asparagus & Horseradish Aioli

The festive season is just around the corner, and we've got the perfect meal for the run-up! Delicious tofu, pistachio and cranberry stuffing balls are served with tender roasted pumpkin, pan-fried asparagus and green beans and drizzled with red wine & rosemary gravy for a meal packed with seasonal flavours. For a holiday-worthy feast, enjoy this meal along with our two other festive fare recipes, which can be cooked and eaten together, similar to the Christmas bags.


Ingredients

To Serve

  • 50g horseradish aioli

Stuffing Balls

  • 1 drizzle of oil
  • 1/2 tsp salt
  • 25g panko breadcrumbs
  • 2 Tbsp plant-based milk
  • 2 Tbsp flour
  • 1 pack chopped & roasted pistachios
  • 1/2 pack sage stuffing spices
  • 150g tofu
  • 1 pack dried cranberries, finely chopped

Roasties

  • 1 drizzle of oil
  • 400g diced pumpkin

Beans

  • 1 drizzle of oil
  • 150g bunch asparagus, ends trimmed
  • 100g green beans, ends trimmed

Gravy

  • 100g red wine & rosemary gravy

Steps

  1. Preheat oven to 220°C (or 200°C fan bake).
  2. Finely chop cranberries. Pat tofu dry and crumble into a medium bowl (see tip). Add cranberries, 1/2 pack sage stuffing spices, pistachios, flour, plant-based milk, 1/2 pack breadcrumbs and salt to bowl and mix well using your hands, until combined. Set aside.
  3. Toss pumpkin on a medium lined oven tray with oil and season with salt and pepper. Roast on lower rack for 25-30 minutes, until golden.
  4. Squeeze tofu mixture firmly into golf ball-sized balls and place on a lined oven tray. Drizzle stuffing balls with oil. Bake on upper oven rack for 15-20 minutes, until golden and cooked through.
  5. Trim beans and asparagus. Heat oil in a medium frypan on high heat. Cook beans and asparagus with a pinch of salt for 4-5 minutes, until tender and starting to brown. Season to taste with salt and pepper.
  6. Just before serving, heat gravy in a small pot on medium heat for 2-3 minutes to warm through.
  7. Roasties, beans and stuffing balls topped with gravy. Serve horseradish aioli on the side for dipping.
