Pork, Apple and Cranberry Burgers with Lettuce Slaw

Ingredients

PORK, APPLE AND CRANBERRY BURGERS

  • ½ carrot
  • ½ courgette
  • 450g pork, apple and cranberry sausage grind
  • ¼ cup panko breadcrumbs
  • 1 teaspoon Worcestershire sauce

LETTUCE SLAW

  • 2 tablespoons mayonnaise
  • 1 teaspoon vinegar (e.g. red wine, white wine)
  • ½ teaspoon mustard (e.g. Dijon, wholegrain)
  • 1 apple
  • ½ punnet cherry tomatoes
  • ½ telegraph cucumber
  • ½ carrot
  • ½ courgette
  • 1 baby cos lettuce

MUSTARD MAYO (OPTIONAL, ADULTS)

  • ¼ cup mayonnaise
  • 2 teaspoons mustard (e.g. Dijon, wholegrain)

TO SERVE

  • 5-6 burger buns
  • 2-3 teaspoons butter (optional)

Steps

  1. oven to 150°C. Line an oven tray with baking paper. Preheat BBQ grill or hot plate to medium (if using).
  2. Grate first measure of carrot and courgette until you have ½ cup of each. Place into a large bowl, along with pork, apple and cranberry sausage grind, breadcrumbs and Worcestershire sauce and mix well using clean hands.
  3. Using a 1/3 cup measure, scoop out mixture and shape into 1cm-thick burger patties.
  4. Mix first measure of mayonnaise, vinegar and mustard in a large bowl until combined. Cut apple into thin matchsticks; cut cherry tomatoes in half; cut cucumber in half lengthways then thinly slice; grate remaining carrot and courgette; finely slice lettuce. Add all to bowl with dressing and toss to combine.
  5. Heat a drizzle of oil in a large fry-pan on medium heat. Cook patties for 2-3 minutes each side, until cooked through.
  6. While the patties are cooking, slice buns in half horizontality, then place the buns back together on prepared tray. Warm in oven for 5 minutes. Mix mustard mayo ingredients together in a small bowl (if using)
  7. Place buns, lettuce slaw and burger patties in the middle of the table for everyone to help themselves. Spread buns with mustard mayo or butter (if using), top with a burger patty, a small handful of lettuce slaw and finish with the lid of the bun. Serve remaining lettuce slaw on the side.
