Greek Lamb Burgers with Tzatziki and Salad

A great way to get the kids involved by building their own burger


Ingredients

GREEK LAMB BURGERS

  • 450g lamb mince
  • ¼ cup panko breadcrumbs
  • 1 tablespoon Greek lamb spice mix
  • ¼ iceberg lettuce
  • 1 tomato
  • 6 burger buns

TZATZIKI

  • ½ cup natural yoghurt
  • 1 tablespoon finely chopped mint leaves

SALAD

  • 1 teaspoon vinegar (e.g. red wine, white wine, cider)
  • 2 teaspoons olive oil
  • ¼ iceberg lettuce
  • 2 tomatoes
  • ¼ telegraph cucumber
  • ½ block feta cheese

TO SERVE

  • 1-2 tablespoons sweet chilli sauce (optional, adults)

Steps

  1. oven to 180°C. Line an oven tray with baking paper. Preheat BBQ hot plate or grill to medium-high (if using).
  2. Place lamb, panko breadcrumbs and Greek spice mix into a medium bowl and mix well. Divide lamb mix into six even amounts, roll into balls and then flatten into 1cm-thick patties. Set aside.
  3. Thinly slice first measure of lettuce and tomato and set aside. In a small bowl, mix yoghurt and mint together and set aside.
  4. Mix vinegar and oil together in a large bowl. Tear lettuce into medium sized pieces; dice tomato and cucumber 1-2cm; dice feta 1cm. Add all to bowl with vinegar and oil and toss to combine. Season with salt and pepper and set aside.
  5. Heat a drizzle of oil in a large fry-pan on medium-high heat and cook patties, in two batches, for 2-3 minutes each side, until golden and cooked through. Wipe out pan between batches and add another drizzle of oil as needed.
  6. While patties are cooking, slice buns in half horizontally and place, cut-side-up, on prepared tray. Cook in oven for 5-7 minutes, until toasted lightly and warmed through.
  7. place a patty onto the base of each bun and top with sliced lettuce and tomato. Dollop on tzatziki and sweet chilli sauce (if using) and finish with the top half of the bun. Serve salad on the side and drizzle any remaining tzatziki over salad.
