Hawaiian Bacon Pizzas with Salad

A classic Friday night dinner.


Ingredients

HAWAIIAN BACON PIZZAS

  • 2 pizza bases
  • 1 pottle tomato paste
  • 1-2 tablespoons sweet chilli sauce
  • 2 cups grated Colby cheese
  • 1 packet bacon mince
  • ½ red onion, thinly sliced
  • ½ sweet Palermo capsicum, core and seeds removed then thinly sliced into rounds
  • 1 can pineapple pieces, drained
  • 1 sachet BBQ sauce

SALAD

  • 1 baby cos lettuce
  • ½ sweet Palermo capsicum, core and seeds removed
  • 1 punnet cherry tomatoes
  • ½-1 sachet honey and mustard dressing

Steps

  1. oven to 220°C. Preheat two oven trays (or pizza stones if you have them).
  2. Lay two sheets of baking paper on a bench and place pizza bases on top. In a small bowl, combine tomato paste and sweet chilli sauce. Divide tomato mixture between bases and spread to cover.
  3. Sprinkle cheese evenly over the bases and crumble over bacon mince. Top with red onion, first measure of capsicum and pineapple pieces. Carefully lift up baking paper with pizzas on top and place on preheated tray (or pizza stones).
  4. Carefully slide baking paper away (use a fish slice to help with this).
  5. Cook pizzas for about 12 minutes, until bases are crisp and golden around the edges. Swap trays halfway to ensure even cooking. Remove from oven, drizzle over BBQ sauce to taste and season with pepper.
  6. While pizzas are cooking, prepare salad. Roughly tear or chop lettuce and dice second measure of capsicum 1cm. Add to a medium bowl with cherry tomatoes and dressing and toss to combine. Season with salt and pepper.
  7. slice pizzas into 6-8 pieces and divide between plates. Serve salad on the side.
