Beef Sirloin Steaks with Smoky Wedges and Chipotle Mayo

Ingredients

SMOKY WEDGES

  • 600g potatoes, scrubbed and cut into 1cm-thick wedges
  • 1 sachet smoked chipotle salt seasoning (optional, adults)

SLAW

  • 1½ tablespoons mayonnaise
  • 1 teaspoon vinegar (e.g. red wine, white wine)
  • ¼ teaspoon mustard (e.g. Dijon, wholegrain)
  • ½ iceberg lettuce
  • 2 carrots
  • 1 courgette

BEEF SIRLOIN STEAKS

  • 550g beef sirloin steaks (at room temperature)

CHIPOTLE MAYO

  • ¼ cup mayonnaise
  • 2 teaspoons chipotle sauce (optional, adults)

Steps

  1. oven to 220°C. Line an oven tray with baking paper. Preheat BBQ hot plate or grill to high (if using).
  2. Toss wedges with a drizzle of oil and smoked chipotle salt seasoning (if using) on prepared tray. Cook for 25-30 minutes, until golden and cooked through. Turn once during cooking.
  3. In a large bowl mix together first measure of mayonnaise, vinegar and mustard. Finely slice lettuce and grate carrots and courgette. Add to bowl with mayonnaise and vinegar and toss to combine. Season to taste with salt and pepper.
  4. Pat beef steaks dry with paper towels and season with salt. Heat a drizzle of oil in a large fry-pan on high heat and cook steak for about 2 minutes each side for medium-rare (depending on thickness), or until cooked to your liking. Set aside, covered with foil, to rest.
  5. While steak rests, prepare chipotle mayo. In a small bowl combine mayonnaise and chipotle sauce (if using) and mix to combine.
  6. Slice beef steaks thickly against the grain.
  7. divide smoky wedges, slices of beef sirloin steak and slaw between plates. Serve a dollop of chipotle mayo on the side.
