Soba Noodles with Goma Dare Sauce and Edamame Salad

Japanese soba noodle salad with tasty sesame sauce.
Ingredients
SOBA NOODLES
- 3 bundles soba noodles
- 1 tablespoon sesame oil
EDAMAME SALAD
- ¾ packet shelled edamame beans, defrosted
- 1 corn cob, husk and silk removed
- ½ teaspoon salt
- 1 tablespoon mayonnaise
VEGETABLES
- 1 capsicum, seeds and core removed
- 1 carrot
TO SERVE
- 1-2 spring onions
- 150-200g veggie goma dare sauce
- 2-3 tablespoons veggie wasabi furikake
Steps

a large pot of salted water to the boil. Bring a full kettle to the boil.

Cook soba noodles in pot of boiling water for 4-5 minutes, until just tender. Drain well and run under cold water to cool. Drain again and toss with sesame oil to prevent sticking.

While noodles are cooking, remove kernels from corn cob. To do this, stand corn cob on its end on a chopping board and use a sharp knife to slice down to remove kernels. Place edamame beans, sweetcorn and salt in a medium heat-proof bowl.

Cover with boiling water and set aside for 3-4 minutes, until edamame beans are bright green. Drain and cool under cold water, drain again and set aside in a medium bowl. Fold through mayonnaise and season to taste with salt and pepper.

Finely slice capsicum and peel and grate carrot. Set aside.

Finely slice spring onions.

divide soba noodles between bowls and top with edamame salad and vegetables. Drizzle with goma dare sauce and sprinkle with wasabi furikake and spring onions.
