Goma Dare Beef Stir-Fry with Edamame Sesame Rice

A delicious stir-fry with Japanese flavours.


Ingredients

EDAMAME SESAME RICE

  • 1 cup jasmine rice
  • 1½ cups water
  • 1½ cups frozen, shelled edamame beans, defrosted
  • ½ teaspoon sesame oil

GOMA DARE DRESSING

  • 1 clove garlic, minced
  • 2 teaspoons finely grated ginger
  • 1 teaspoon GF soy sauce
  • 1 tablespoon GF sweet chilli sauce
  • 80g GF goma dare

BEEF STIR-FRY

  • 1 head broccoli, stalk trimmed 2-3cm
  • 1 carrot
  • 2 spring onions
  • 550g beef rump steaks (at room temperature)

Steps

  1. a full kettle to the boil.
  2. Combine rice, water and a pinch of salt in a medium pot and bring to the boil. As soon as it boils, cover with a tight-fitting lid and reduce to lowest heat to cook for 12 minutes. Turn off heat and leave to steam, still covered, for a further 8 minutes. Do not lift lid during cooking.
  3. Mix all dressing ingredients in a bowl. Cut broccoli into small florets, thinly slice stalk; cut carrot in half lengthways, thinly slice; slice spring onions 1cm, keep white and green parts separate. Place edamame beans in a heat-proof bowl and cover with boiling water. Cover, leave for 1 minute and drain.
  4. Re-boil full kettle. Pat beef dry and season. Heat a drizzle of oil in a large fry-pan on high heat. Cook beef for 2-3 minutes each side for medium-rare (depending on thickness), or until cooked to your liking. Set aside, covered, to rest. Set pan aside. Slice rested beef thinly against the grain.
  5. Place broccoli and carrots in a medium, heat-proof bowl and cover with boiling water. Cover with a plate and leave for about 4 minutes, until bright green and almost tender. Drain well. Return pan with a drizzle of oil to high heat.
  6. Stir-fry broccoli, carrot and white part of spring onions for about 2 minutes, until veggies are tender. Add half the remaining spring onion, goma dare dressing, sliced beef and any resting juices to pan, toss until combined and season. Fold edamame beans and sesame oil through cooked rice.
  7. divide edamame sesame rice between plates or bowls and with top goma dare beef stir-fry. Garnish with reserved green part of spring onion (if using).
