Chilli and Miso Glazed Fish with Sesame Roasted Vegetables

Ingredients
SESAME ROASTED VEGETABLES
- 200g peeled pumpkin, diced 1.5cm
- 200g orange kumara, diced 1.5cm
- ½ punnet white button mushrooms
- ½ bunch broccolini or ½ head broccoli, cut into florets
- 1½ teaspoons sesame spice mix
- ½ teaspoon sesame oil
CHILLI AND MISO GLAZED FISH
- 1½ tablespoons white miso paste
- 1 tablespoon sweet chilli sauce
- 1 teaspoons sesame oil
- 1 teaspoon hot water
- 300g fish fillets
TO SERVE
- 2-3 spring onions, green part only, thinly sliced
- 2-3 tablespoons picked coriander leaves

oven to 220°C. Line two oven trays with baking paper.

Toss all sesame roasted vegetable ingredients together on first prepared tray with oil. Season with salt and pepper and roast for about 20 minutes, until pumpkin, kumara and broccolini/broccoli are tender. Turn halfway to ensure even cooking.

While vegetables are roasting, prepare the fish. In a small bowl mix together miso paste, sweet chilli sauce, sesame oil and hot water.

Pat fish dry with paper towels, remove any remaining scales and bones and cut any larger fillets in half. Place in a single layer on second prepared tray. Use a spoon to spread chilli miso mixture evenly over top of fish. Set aside.

When pumpkin and kumara are tender, remove from oven and turn oven to high grill. Cook fish under hot grill (on middle rack of the oven) for 3-4 minutes, or until just cooked through (watch fish carefully to ensure it doesn’t burn).

Thinly slice spring onions on an angle.

divide sesame roasted vegetables between plates. Top with chilli and miso glazed fish and sprinkle over sliced spring onions and coriander leaves.
