
Vietnamese Chicken Laab Super Grain Lettuce Cups

Ingredients
SUPER GRAIN SALAD
- 75g super grain mix
- ½ capsicum
- ½ Lebanese cucumber
- ½ carrot
- 2 tablespoons finely diced red onion
VINAIGRETTE
- ½ teaspoon sesame oil
- 1 teaspoon soy sauce
- 1 teaspoon rice vinegar
- 1 tablespoon lemon juice
- ½ teaspoon finely grated ginger
- ½ teaspoon extra-virgin olive oil (optional)
VIETNAMESE CHICKEN LAAB
- ¼ teaspoon oil, for cooking (or use spray oil)
- 275g ground chicken breast
- 40g lemongrass kaffir lime paste
- Pinch of chilli flakes, chilli powder or cayenne powder (optional)
- 3 tablespoons chopped coriander leaves and stalks
TO SERVE
- ½-1 baby romaino lettuce, leaves separated
- 50g mung bean sprouts
- 3 tablespoons chopped mint leaves
- 1 tablespoon chopped peanuts (optional)
- ½ sachet habanero hot sauce (optional)
- ½ lemon, cut into wedges

a small pot of salted water to the boil.

Cook super grain mix in pot of boiling water for about 15 minutes, until grains are tender with a slight bite. Drain, rinse under warm water and leave to drain well.

While super grains are cooking, prepare the rest of the meal. Mix all vinaigrette ingredients together in a large bowl.

Remove core and seeds from capsicum and dice 1cm; cut cucumber in half lengthways, scoop out seeds then thinly slice; peel carrot and grate or cut into thin matchsticks (alternatively use a spiralizer or julienne peeler to create ‘noodles’). Place all in bowl with vinaigrette, along with diced onion.

When grains have 8 minutes cook time remaining, heat oil in a large fry-pan on high heat. Cook ground chicken, lemongrass kaffir lime paste, a pinch of salt and chilli flakes (if using) for 3-4 minutes, using a wooden spoon to break up chicken as it cooks, until cooked through and any liquid has evaporated. Add chicken to a serving bowl and stir through coriander.

Add cooked and drained grains to bowl with vinaigrette and vegetables and toss to combine. Season to taste with salt and pepper.

Divide lettuce leaves between plates. Fill each leaf with super grain salad and Vietnamese chicken laab. Top with mung bean sprouts, mint, peanuts and a little habanero hot sauce (if using). Squeeze over lemon juice just before eating.
