Smoked Salmon with Beetroot and Chive Pilaf

This delicious pilaf is an easy and warming one-pot stunner!


Ingredients

BEETROOT AND CHIVE PILAF

  • 1 teaspoon butter
  • ½ brown onion, finely diced
  • 1 baby beetroot, grated
  • ½ carrot, grated
  • ½ cup Japanese brown rice
  • ¾ cup + 2 tablespoons vegetable stock or water
  • ¼ teaspoon salt
  • 110g manuka smoked salmon, skin discarded, flaked into small chunks
  • 1 handful baby spinach leaves
  • 1 tablespoon vinegar (e.g. red wine, white wine, cider)
  • 1 egg
  • 1 tablespoon sliced almonds
  • 2 tablespoons finely chopped chives
  • Juice of ½ lime

TO SERVE

  • 1-2 tablespoons horseradish cream
  • 1 tablespoon finely chopped chives

Steps

  1. a small pot of salted water to the boil.
  2. Heat butter and a drizzle of oil in a small pot on medium heat. Cook onion, beetroot and carrot for 2-3 minutes, until softened. Stir rice, stock/water and salt into pot with beetroot and bring to the boil.
  3. As soon as it boils, cover with a lid and reduce to lowest heat to cook for 15 minutes. Turn off heat, quickly add salmon, return lid and leave to steam, covered, for 8 minutes. Do not lift lid again during cooking.
  4. While rice steams, roughly chop spinach. Add vinegar to pot of boiling water. Reduce heat to a simmer and carefully crack egg into water. Poach for 2-4 minutes, until egg white is just set, but yolk is still runny.
  5. Remove egg from pot with a slotted spoon and place on paper towel to remove excess water. Cover to keep warm.
  6. When rice has finished steaming, fluff up grains with a fork. Add spinach, almonds, chives and lime juice. Carefully fold to combine and season to taste with salt and pepper.
  7. spoon beetroot and chive pilaf into a bowl and top with poached egg and a dollop of horseradish cream. Sprinkle with remaining chives.
