Pan-Fried Fish with Green Pea Smash and Hollandaise

Ingredients

ROAST POTATOES

  • 800g potatoes, scrubbed and cut into halves and quarters until roughly the same size

SALAD

  • 2 teaspoons vinegar (e.g. white wine, red wine, balsamic)
  • 1 teaspoon mustard (e.g. wholegrain, Dijon)
  • 2 tablespoons olive oil
  • ½ telegraph cucumber
  • 2 tomatoes
  • ½ bag mesclun leaves

PAN-FRIED FISH

  • 600g fish fillets

GREEN PEA SMASH

  • 250g frozen peas
  • 2 tablespoons butter
  • Zest of 1 lemon
  • Juice of ½ lemon
  • 3 tablespoons chopped basil leaves
  • 1-2 tablespoons mayonnaise

TO SERVE

  • 100g hollandaise sauce

Steps

  1. oven to 220°C. Line an oven tray with baking paper. Bring a small pot of salted water to the boil.
  2. Toss potatoes on prepared tray with a drizzle of oil and season with salt and pepper. Roast for 20-22 minutes, until tender and golden.
  3. Whisk vinegar, mustard and olive oil in a large bowl and set aside. Cut cucumber in half lengthways and thinly slice. Cut tomatoes into thin wedges. Just before serving, add veggies and mesclun to bowl with dressing. Toss to combine and season to taste with salt and pepper.
  4. Pat fish dry with paper towels and remove any remaining scales or bones. Cut any larger fillets in half, season with salt and pepper and set aside.
  5. Cook peas in pot of boiling water for about 2 minutes, until bright green and tender. Drain and return to pot with all remaining green pea smash ingredients. Roughly smash with a fork or masher and season to taste with salt and pepper. Set aside, covered, to keep warm.
  6. When potatoes have 10 minutes cook time remaining, heat a drizzle of oil in a large fry-pan on high heat. Cook fish, in batches, for 1-2 minutes each side, until just cooked through. PREHEAT
  7. pile roast potatoes on to plates, top with pan-fried fish and drizzle with hollandaise sauce. Serve salad and green pea smash on the side.
