Chipotle Pork Pizzas with Woodstock Bourbon BBQ Sauce and Shredded Slaw

Add a bit of heat to these pizzas with chipotle sauce.


Ingredients

CHIPOTLE PORK PIZZA

  • 300g pork mince
  • 1½ teaspoons Worcestershire sauce
  • ¼ teaspoon salt
  • 1½ teaspoons tomato sauce
  • ½ sachet chipotle sauce
  • 3 tablespoons tomato paste
  • 1 tablespoon sweet chilli sauce
  • ½ teaspoon olive oil
  • 1 wholemeal pizza base
  • 1 cup grated Colby cheese
  • ½ courgette, finely diced
  • ¼ red onion, thinly sliced

SHREDDED SLAW

  • ¼ cabbage
  • 1 carrot
  • ¼ red onion (optional)
  • 2 tablespoons chopped, roasted peanuts
  • 1 teaspoon mustard (e.g. Dijon, wholegrain)
  • ½ teaspoon sweet chilli sauce

TO SERVE

  • 1-2 tablespoons Woodstock Bourbon BBQ Sauce

Steps

  1. oven to 220°C. Preheat an oven tray (or pizza stone if you have one).
  2. In a medium bowl, combine pork mince, Worcestershire sauce, salt and tomato sauce. In another small bowl, combine chipotle sauce, tomato paste, sweet chilli sauce and olive oil. Set both aside.
  3. Lay one sheet of baking paper on a bench or flat surface and place pizza base on top.
  4. Spread tomato paste mixture over pizza base and sprinkle grated cheese over evenly. Use a spoon to scoop balls of pork mixture and place onto pizza. Scatter over courgette and first measure of onion.
  5. Lift paper up with pizza on top and place onto preheated tray then carefully slide baking paper away (use a fish slice to help with this). Cook pizza for 12-14 minutes, until base is crisp and golden around the edges.
  6. While pizza cooks, prepare slaw. Thinly shred cabbage until you have about 1 cup worth; peel and grate carrot; thinly slice second measure of red onion (if using). Toss together in a large bowl with chopped peanuts, mustard, sweet chilli sauce and a drizzle of olive oil.
  7. Cut pizza into 6-8 pieces, divide between plates and drizzle with Woodstock Bourbon BBQ Sauce. Serve with a good handful of shredded slaw on the side.
