
Bacon, Pineapple and Feta Pizzas with Ribbon Salad

A nice and easy pizza recipe, with the popular flavours of pineapple and bacon.
Ingredients
BACON, PINEAPPLE AND FETA PIZZAS
- 3 wholewheat pizza bases
- 250g shoulder bacon, diced 1cm
- 1 tub pizza sauce
- 1½ cups grated Colby cheese
- 1 tomato, thinly sliced
- 1 can pineapples pieces, drained and roughly chopped
- ½ red onion, thinly sliced (optional, adults)
- 100g feta cheese
RIBBON SALAD
- 2 teaspoons olive oil
- ¼ teaspoon runny honey
- 1 teaspoon vinegar (e.g. red wine, white wine)
- 2 carrots
- ½ telegraph cucumber
TO SERVE
- ¼ cup BBQ sauce (optional)

oven to 220°C. Preheat two oven trays (or pizza stones if you have them).

Lay two sheets of baking paper on bench. Cut one pizza base in half. Place one and a half bases on each sheet of baking paper.

Heat a medium, dry fry-pan on medium-high heat and cook bacon for 3-4 minutes, until browned.

Spread pizza sauce over each base and evenly top with cheese, tomato, pineapple, cooked bacon and onion (if using). Crumble over feta and season with pepper.

Carefully lift baking paper with pizzas on top and place on preheated trays, then gently slide baking paper away (use a fish slice to help with this). Cook pizzas for 10-12 minutes, until bases are crispy and golden around the edges. Swap position of trays halfway to ensure even cooking.

While pizzas are cooking, prepare the salad. Mix oil, honey and vinegar together in a large bowl. Peel carrot then peel carrot and cucumber into long, thin ribbons, stopping when you reach the core and seeds. Add both to bowl with dressing and toss to combine. Season to taste with salt and pepper.

drizzle BBQ sauce (if using) over pizzas and cut into wedges. Divide slices of pizza between plates and serve ribbon salad on the side.
