Greek Beef and Courgette Pizzas

This Pizza is the perfect meal for a Friday night – super quick and easy and the kids will love getting stuck in to help!


Ingredients

GREEK BEEF AND COURGETTE PIZZAS

  • 2 pizza bases
  • 1 pottle tomato paste
  • 2 tablespoons mild sweet chilli sauce
  • ½-1 pack grated three cheese mix
  • 2 courgettes, diced 1cm
  • ½ red onion, thinly sliced
  • 1 pack Greek beef mince

BALSAMIC DRIZZLE

  • 3 tablespoons mayonnaise
  • 1 sachet balsamic dressing

COS SALAD

  • ½ telegraph cucumber
  • ½ red onion (optional, adults)
  • 1 baby cos lettuce

Steps

  1. oven to 220°C. Preheat two oven trays (or pizza stones if you have them).
  2. Lay two sheets of baking paper on the bench and place pizza bases on top. Mix tomato paste and sweet chilli sauce together in a small bowl. Divide tomato mixture between bases and evenly spread to cover.
  3. Evenly sprinkle over cheese, courgettes and first measure of red onion. Using clean hands, break away teaspoon-sized pieces of Greek beef mince and divide between bases. Season with salt and pepper.
  4. Carefully lift up baking paper with pizzas on top and place pizzas on preheated trays (or pizza stones) then carefully slide baking paper away (use a fish slice to help with this).
  5. Cook pizzas for 12–14 minutes, until bases are crisp and golden around the edges. Swap trays halfway to ensure even cooking. While pizzas cook, combine mayonnaise and balsamic dressing in a small bowl and set aside.
  6. Dice cucumber 1cm; thinly slice second measure of red onion (if using); roughly tear cos lettuce. Toss in a large bowl with 2 tablespoons of the balsamic drizzle and season to taste with salt and pepper. Drizzle remaining balsamic drizzle over pizzas and slice into 6-8 pieces.
  7. divide slices of Greek beef and courgette pizza between plates and serve cos salad on the side.
