Bacon and Tomato Gnocchi with Ricotta Salata Salad

Ricotta Salata is a lightly salted ricotta that’s been pressed and aged to form a crumbly, slightly sharp cheese.


Ingredients

BACON AND TOMATO GNOCCHI

  • 1 tablespoon olive oil
  • 1 leek, thinly sliced
  • 250g shortcut bacon, diced 1cm
  • 2 cloves garlic, minced
  • 2-3 tablespoons thyme leaves, chopped
  • ¼ teaspoon salt
  • 2 tablespoons tomato paste
  • Zest of 1 lemon
  • ½ cup white wine or chicken stock
  • 1 can chopped tomatoes
  • 1 cup chicken stock
  • 500g gnocchi
  • ½ teaspoon brown sugar
  • 1 teaspoon balsamic vinegar
  • 1 courgette, grated

RICOTTA SALATA SALAD

  • 2-3 handfuls rocket leaves
  • 1-2 spring onions, thinly sliced
  • 100g ricotta salata, crumbled
  • Juice of ½ lemon
  • 1-2 tablespoons olive oil

Steps

  1. a large pot of salted water to the boil.
  2. Heat oil in a large, deep fry-pan on medium-high heat. Cook leek and bacon for 3-4 minutes, until softened.
  3. Add garlic, thyme, salt and tomato paste and cook a further 1-2 minutes, until fragrant.
  4. Add lemon zest and wine/first measure of stock and cook for 1 minute, until liquid is almost evaporated. Add tomatoes and remaining stock and bring to a simmer. Reduce heat to medium and simmer for about 7 minutes, until thickened and reduced.
  5. While tomato sauce simmers, cook gnocchi in pot of boiling water for about 2 minutes, until floating and tender. Drain well and set aside. Toss all ricotta salata salad ingredients in a large bowl and season to taste with salt and pepper. Set aside.
  6. When sauce has finished cooking, add sugar, balsamic vinegar, courgette, cooked gnocchi to pot and cook for about 2 minutes, until warmed through. Season to taste with salt and pepper.
  7. divide bacon and tomato gnocchi between bowls and scatter over ricotta salata salad.
