Baked Halloumi Ratatouille with Garlic and Basil Bread

A flavoursome Italian ratatouille topped with delish halloumi cheese and served with hot garlic and basil rolls. Enjoy!


Ingredients

BAKED HALLOUMI RATATOUILLE

  • 1 red onion, thinly sliced
  • 2 tablespoons tomato spice mix
  • 1 teaspoon garlic paste
  • 1 can whole peeled tomatoes
  • 1 pottle tomato paste
  • 1-2 teaspoons balsamic vinegar
  • 1-2 teaspoons brown sugar
  • ½ cup vegetable stock
  • ½ bunch broccolini, roughly chopped *
  • ½ bunch curly kale, tough stem removed, and discarded, leaves thinly sliced
  • 1 pottle roasted red capsicum
  • 1 courgette, cut in half lengthways and sliced 1cm
  • 1 pack halloumi cheese, sliced 0.5cm

GARLIC AND BASIL BREAD

  • 1 pack garlic and basil bread rolls

TO SERVE

  • 2 tablespoons parsley leaves

Steps

  1. oven to high grill. Line an oven tray with baking paper.
  2. Heat a drizzle of oil in a large (preferably oven-proof) fry-pan on medium-high heat. Cook onion and tomato spice mix for about 2 minutes, until tender. Add garlic paste, tomatoes, tomato paste, balsamic vinegar, sugar and stock to pan.
  3. Bring to a simmer and cook for about 4 minutes, until thickened slightly. Add broccolini, kale and capsicum and cook for about 2 minutes, until combined and starting to wilt. Add courgette and season to taste with salt and pepper.
  4. Evenly top ratatouille with slices of halloumi then grill for about 5 minutes, until halloumi is golden and veggies are tender.
  5. Place bread rolls on prepared tray and cook (on rack below halloumi) for about 5 minutes, until golden and warmed through. Move tray to upper rack once halloumi is cooked if more heating is required.
  6. Roughly chop parsley.
  7. spoon baked halloumi ratatouille onto plates and top with a sprinkle of parsley. Serve garlic and basil bread rolls on the side.
