LAMB LEG STEAKS WITH VEGETABLE ORZO PASTA

An awesome warming combo.


Ingredients

VEGETABLE ORZO

  • 1 cup orzo pasta
  • 1 head broccoli, cut into very small florets and stalk diced 1cm
  • 1 tomato
  • 1 carrots
  • 1 courgette
  • 1 pottle sundried tomato pesto

LAMB LEG STEAKS

  • 550g lamb leg steaks (at room temperature)
  • 1 tablespoon lamb spice mix
  • 1 tablespoon oil

TO SERVE

  • 1 pottle natural yoghurt

Steps

  1. a large pot of salted water to the boil.
  2. Cook orzo in pot of boiling water for 8–10 minutes. Add broccoli for final 2 minutes of cook time, until bright green and tender and orzo is tender. Drain, refresh with cold water and drain again. Add to a large bowl with a drizzle of olive oil to prevent sticking. Set aside.
  3. While orzo is cooking, pat lamb dry with paper towels, season with salt and evenly coat with lamb spice mix.
  4. Heat oil in a large fry-pan on high heat. Cook lamb for 2-3 minutes each side for medium (depending on thickness), or until cooked to your liking. Set aside, covered in foil, to rest before slicing thickly against the grain.
  5. While lamb cooks, dice tomato 1cm and grate carrot and courgette.
  6. Add veggies and sundried tomato pesto to bowl with broccoli and orzo. Season with salt and pepper and toss well to combine.
  7. spoon vegetable orzo onto plates and top with slices of lamb leg steaks. Dollop over yoghurt.
