BASIL FALAFEL WITH COUSCOUS SALAD AND LEMON HUMMUS

Falafel are made from ground chickpeas and are packed with protein, making them a great meat alternative.


Ingredients

COUSCOUS SALAD

  • Juice of ¾ lemon
  • 1 tablespoon olive oil
  • ½ teaspoon runny honey
  • 2 teaspoons vinegar (e.g. red wine, white wine)
  • ½ telegraph cucumber
  • ½ punnet cherry tomatoes
  • 1 carrot, grated
  • 100g feta cheese
  • 1 cup boiling water
  • 2 teaspoons olive oil
  • 1 cup couscous
  • ½ teaspoons salt
  • 40g raisins
  • 3 tablespoons finely chopped mint leaves

BASIL FALAFEL

  • 1 tub fresh basil and lime falafel mix
  • ¼ teaspoon salt
  • 1 carrot, grated

LEMON HUMMUS

  • 50g hummus
  • 2 tablespoons mayonnaise ▲
  • Juice of ¼ lemon

Steps

  1. a half full kettle to the boil.
  2. In a medium bowl, whisk together first measure of lemon juice, oil, honey and vinegar. Dice cucumber 1cm; cut tomatoes into quarters; peel and grate carrot; crumble feta. Add all to bowl with dressing and toss to combine. Set aside in the fridge while you prepare the rest of the meal.
  3. In a bowl, combine fresh basil falafel mix, salt and grated carrot, until well combined. Heat a good drizzle of oil in a large fry-pan on medium heat. Use a heaped tablespoon measure to scoop out mixture and dollop straight into the pan. Use the back of the spoon or spatula to lightly flatten into patties.
  4. Cook patties, in batches, for 2-3 minutes each side, until golden and cooked through, adding more oil as needed. Set aside, on a paper towels, between batches.
  5. While falafel cook, combine boiling water, second measure of oil, couscous and salt in a heat-proof bowl. Stir, cover and leave to swell for 5 minutes, then fluff up grains with a fork. Add to bowl with salad, along with raisins and mint, and season to taste with salt and pepper.
  6. In a small bowl, mix together hummus, mayonnaise and lemon juice.
  7. place couscous salad onto plates and top with basil falafel and a dollop of lemon hummus.
