TURKEY NACHOS WITH GUAC

Ingredients
TURKEY NACHOS
- 1 red onion, thinly sliced
- 1 pack turkey mince
- 1 carrot, grated
- ½ teaspoon salt
- 2 tablespoons Mexican spice mix
- 1 jar tomato passata
- 2 teaspoons brown sugar
- 2 teaspoons balsamic vinegar
- 1 courgette, grated
- ½ pack grated Swiss cheese
SPICED CORN
- 250g frozen corn
- 1-2 teaspoons Mexican spice mix
TO SERVE
- 1 packet cheese corn chips
- 1 pottle guac
- 2 tablespoons coriander leaves and stalks, roughly chopped (optional)
Steps

oven to grill. Line an oven tray with baking paper.

Heat a drizzle of oil in a medium, oven-proof, fry-pan on mediumhigh heat. Cook onion, turkey mince, carrot, salt and first measure of Mexican spice mix for about 4 minutes, breaking up with a spoon, until browned.

Add passata, brown sugar and balsamic vinegar, bring to a simmer, reduce heat to lowmedium and cook for about 5 minutes until slightly thickened and reduced.

Add courgette and cook a further 2 minutes until tender. Season with salt and pepper to taste.

While turkey is cooking, toss corn and second measure of Mexican spice mix on prepared tray with a drizzle of oil. Season with salt and pepper and grill for about 5 minutes until golden. Move tray to the bottom of the oven to stay warm, until you are ready to serve.

Sprinkle cheese over cooked turkey mixture and place under the grill, above corn, for about 3 minutes until golden.

divide corn chips and turkey mixture between plates. Top with spiced corn and a dollop of guac. Sprinkle with coriander (if using).
