JAPANESE PORK AND MISO RAMEN

Delicious ramen in no time at all.


Ingredients

JAPANESE PORK

  • 600g pork scotch fillets (at room temperature)
  • 1 teaspoon runny honey
  • 2 tablespoons soy sauce
  • 1 clove garlic, minced
  • 1 teaspoon finely grated ginger
  • ½ teaspoon salt
  • 2 teaspoons olive oil

MISO RAMEN

  • 2 carrots
  • 1 brown onion
  • 1 baby bok choy, end trimmed 1cm and rinsed
  • 1½ tablespoons finely grated ginger
  • ¼ teaspoon salt
  • 50g miso ramen paste
  • 1 cup chicken stock
  • 2 cups water
  • 2 tablespoons soy sauce
  • 4 bundles dried udon noodles

Steps

  1. a large pot of salted water to the boil. 
  2. Pat pork dry with paper towels and place in a shallow bowl with all remaining Japanese pork ingredients. Toss well to coat and set aside for at least 10 minutes to marinate.
  3. While pork is marinating, cut carrots in half lengthways and thinly slice. Thinly slice onion and white part of bok choy.
  4. Heat a drizzle of oil in a large, deep fry-pan on mediumhigh heat. Cook pork for 2-3 minutes each side (depending on thickness), until just cooked through. Set aside, covered with foil, to rest for at least 5 minutes.
  5. Wipe pan clean and return to medium-high heat with a drizzle of oil. Stir-fry carrots, onion, ginger and salt for about 2 minutes, until starting to soften. Add miso ramen paste, chicken stock and water and bring to a simmer. Add white part of bok choy and cook for about 1 minute, until tender
  6. Remove miso from heat and stir through green part of bok choy and soy sauce. Season to taste with pepper. While miso broth cooks, place noodles in pot of boiling water, stir to separate strands and cook for 4-5 minutes, until tender. Drain and rinse under warm water to prevent sticking. Thinly slice pork.
  7. divide noodles between bowls. Top with vegetables and slices of pork and pour over miso ramen broth.
