Beef, Bacon and Pineapple Pizzas with Creamy Slaw

Ingredients

Beef and Bacon BBQ Pizza

  • 3 wholewheat pizza bases
  • 140g pizza sauce
  • 1½ to 2 cups grated Colby cheese
  • 300g beef and bacon grind
  • ½ capsicum, core and seeds removed then thinly sliced
  • 1 can pineapple pieces, drained, cut pieces in half (reserve juice)
  • ½ red onion, thinly sliced (optional, adults)
  • BBQ sauce (optional)

Creamy Slaw

  • 125g frozen corn
  • 125g frozen corn * ¼ teaspoon mustard (e.g. Dijon, wholegrain)
  • 2 tablespoons mayonnaise
  • 1 teaspoon vinegar (e.g. red wine, white wine)
  • 1 teaspoons reserved pineapple juice
  • ½ iceberg lettuce
  • ½ capsicum

Steps

  1. oven to 220oC. Preheat two oven trays (or pizza stones if you have them). Bring a small pot of salted water to the boil.
  2. Lay two sheets of baking paper on bench. Cut one pizza base in half. Place one and a half bases on each sheet. Divide pizza sauce between bases and spread to cover evenly. Sprinkle over cheese.
  3. Using clean hands, break off small portions of beef and bacon grind (about a heaped teaspoon worth) and place evenly over pizzas. Scatter capsicum, pineapple pieces and onion (if using) evenly over pizzas and season with salt and pepper.
  4. Carefully lift baking paper with bases on top and place on preheated oven trays (or stones) then carefully slide baking paper away (use a fish slice to help with this). Cook pizzas until the base is crisp and golden around the edges, about 12 minutes. Swap trays halfway to ensure even cooking.
  5. While pizzas are cooking, cook corn in pot of boiling water for 2 minutes, until just tender. Drain and set aside to cool.
  6. In a large bowl, whisk mustard, mayonnaise, vinegar and reserved pineapple juice. Thinly slice lettuce; remove core and seeds from capsicum and thinly slice. Place all in the bowl with dressing along with corn and toss to combine. Season to taste with salt and pepper.
  7. To serve, drizzle pizzas with your favourite BBQ sauce (if using) and slice into wedges. Serve pizzas with creamy slaw on the side.
