Ingredients
Chicken and Bacon Loaded Potato Bites
- 600g potatoes, scrubbed and diced 2cm
- 1-2 spring onions
- 100g Colby cheese
- 450g GF chicken and bacon mince
Chipotle Slaw
- ½ tub sour cream
- 1 tablespoon GF chipotle sauce (depending on heat preference)
- ½ cabbage
- 2 carrots
- 1 apple
- Juice of ½ lime
To Serve
- ½ lime
- Reserved chipotle sour cream

Preheat oven to 200°C. Line an oven tray with baking paper. Toss potato bites with a drizzle of olive oil on prepared tray and season with salt and pepper. Roast for 20 minutes, until tender.

While potatoes are cooking, combine sour cream and chipotle sauce in a small bowl and set aside. Thinly slice spring onions; grate cheese; cut ½ lime into wedges. Set all aside.

Thinly slice cabbage until you have about 3 cups worth; grate carrots; cut apple into thin matchsticks or grate. Place all in a large bowl. Add lime juice and half the chipotle sour cream (set aside remaining chipotle sour cream to serve) and toss to combine. Season to taste with salt and pepper.

Heat a drizzle of oil in a medium fry-pan on high heat. Cook chicken and bacon mince for about 4 minutes, until cooked through. Drain any excess oil from the pan.

When potatoes have been cooking for 20 minutes, sprinkle spring onions, chicken and bacon mince and cheese over potato bites and cook a further 5 minutes, until cheese is melted.

To serve, divide chicken and bacon loaded potato bites between plates and serve chipotle slaw on the side. Serve with a dollop of remaining chipotle sour cream and a lime wedge to squeeze over just before eating.
