Naked Beef Burgers with Beetroot Carrot Salad and Chunky Chips

Mix your patty mixture in advance to save on prep time. To avoid stained hands, use gloves to prepare beetroot.


Ingredients

Chunky Chips

  • 600g potatoes, scrubbed

Naked Beef Burgers

  • 450g beef mince
  • ½ brown onion, finely diced
  • 1 clove garlic, minced
  • 1 carrot, grated
  • ½ cup GF panko breadcrumbs
  • 1 egg
  • 1 tablespoon GF soy sauce
  • ¼ teaspoon salt
  • 1 tablespoon finely chopped rosemary leaves
  • 2 tablespoons chopped parsley leaves and stalks
  • 100g Colby cheese

Beetroot Carrot Salad

  • 1 beetroot
  • 3 carrots
  • 35g sunflower seeds
  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon GF balsamic vinegar
  • 1 teaspoon runny honey

To Serve

  • 1 tablespoon chopped parsley leaves and stalks

Steps

  1. Preheat oven to 220°C. Line two oven trays with baking paper. Cut potatoes into 1.5–2cm-thick chips. Toss with a drizzle of oil on first prepared tray and season with salt. Bake for 25–30 minutes, until golden. Turn once during cooking.
  2. Combine all naked beef burger ingredients (except cheese) in a large bowl, season with pepper and mix well using clean hands. Use a 1/3 cup measure to scoop out mixture and shape into 1.5cm-thick patties. Place onto a plate and into the fridge to firm up while you make the salad.
  3. Peel and grate beetroot and carrots and place in a medium bowl, along with all remaining salad ingredients. Season with salt and pepper and toss to combine. Slice cheese into thin 0.5cm slices, roughly the same width as patties.
  4. Heat a drizzle of oil in a large fry-pan on medium heat. Cook patties for 3–4 minutes each side, until just cooked through.
  5. Transfer to second prepared tray and top each patty with a slice of cheese. Place on highest rack of oven to cook for 1–2 minutes, until cheese is melted slightly but still holds its shape.
  6. To serve, place a patty on each plate. Serve beetroot carrot salad and chunky chips on the side. Sprinkle over parsley.
