
Slow-Braised Beef Casserole with Jasmine Rice

If you have a slow cooker, you can pop all the casserole ingredients (except spinach) in before you go to work. Set heat to low for the day.
Ingredients
Slow-Braised Beef Casserole
- 600g diced beef (at room temperature)
- ¼ cup flour
- 1 brown onion, diced 1cm
- 2 carrots, diced 2cm
- 1 tablespoon beef spices
- ½ cup red wine (or beef stock)
- 1 can chopped tomatoes
- 1 cup beef stock
- ½ teaspoon salt
- 2 tablespoons Worcestershire sauce
- ½ bag baby spinach leaves
Jasmine Rice
- 2 cups jasmine rice
- 3 cups water
To Serve
- 1-2 spring onions, thinly sliced

Preheat oven to 185oC. Pat beef dry with paper towels and season with salt and pepper. Toss in a shallow bowl with flour until coated. Heat a drizzle of oil in a large, oven-proof fry-pan (with a lid) on high heat and cook beef for 1-2 minutes, turning occasionally, until browned. Remove from pan and set aside.

Return pan to heat with a drizzle of oil and cook onion and carrots for about 4 minutes, until softened. Add beef spices and cook a further 1 minute, until fragrant.

Add cooked beef, wine/first measure of stock, tomatoes, beef stock, salt and Worcestershire sauce and bring to a simmer. Once simmering, remove from heat, cover with lid and place pan in oven to cook for about 1 hour, until beef is tender and sauce has thickened.

When casserole has 25 minutes cook time remaining, combine rice, water and a pinch of salt in a pot and bring to the boil. As soon as it boils, cover with a tight-fitting lid and reduce to lowest heat to cook for 12 minutes. Turn off heat and leave to steam, still covered, for a further 8 minutes. Do not lift lid during cooking.

When casserole has finished cooking, stir through spinach and leave to wilt slightly.

To serve, spoon ¾ cup cooked jasmine rice between bowls and top with slow-braised beef casserole. Sprinkle with spring onions.
