
Halloumi Burgers with Apple Slaw and Chunky Fries

Make the patty mixture beforehand and store, covered, in the fridge for a quick and easy Friday night meal.
Ingredients
Chunky Fries
- 600g potatoes, scrubbed and cut into 1.5cm-thick fries
Halloumi Burgers
- 1 brown onion, finely diced
- 1 clove garlic, minced
- 1 tablespoon finely grated ginger
- 1 tablespoon chermoula
- 1 can brown lentils, rinsed and drained well
- 200g halloumi, grated
- 2 eggs
- 1 cup panko breadcrumbs
Apple Slaw
- 2 tablespoons mayonnaise
- 1 tablespoon sweet chilli sauce
- 1 pottle sour cream
- ¼ red cabbage *
- 1 apple
- 1 carrot
To Serve
- 6 burger buns
- 1 tomato
- Butter (optional)
- Reserved sweet chilli sour cream (optional)

Preheat oven to 220°C. Line two oven trays with baking paper. Toss potatoes with a drizzle of oil on first prepared tray and season with salt and pepper. Cook for about 28 minutes, until golden and tender.

While potatoes cook, heat a drizzle of oil in a large fry-pan on medium-high heat. Cook onion, garlic and ginger for about 2 minutes, until soft. Place in a large bowl with all remaining halloumi burger ingredients and mix well to combine. Wipe pan clean with paper towels and set aside.

Using a ½ cup measure and clean hands, form mixture into 6 patties about 2cm-thick. Return pan to medium-high heat with a drizzle of oil. Cook patties about 2 minutes each side, until crispy. Transfer to second prepared tray and cook, on rack below fries, for about 8 minutes, until cooked through.

While burgers cook, combine mayonnaise, sweet chilli sauce and sour cream in a bowl. Thinly slice cabbage until you have about 2 cups worth; cut apple into thin matchsticks (or grate); grate carrot. Place veggies in a bowl, along with 3 tablespoons of the sweet chilli sour cream and season.

Cut burger buns in half horizontally. Once patties have finished cooking, remove from tray, along with baking paper. Place buns. Cut-side-up on tray and bake for 3-5 minutes, until warmed through and crunchy. Thinly slice tomato.

To serve, spread bottom bun with a little butter and the top bun with a little sweet chilli sour cream (if using). Top bottom buns with halloumi patties, apple slaw and slices of tomato. Serve with chunky fries and any remaining sweet chilli sour cream and apple slaw on the side.
