Chicken and Avocado Burgers with Apple Slaw

If you feel like a BBQ, cook chicken on the BBQ grill or hot plate for 3-4 minutes each side, or until cooked through.
Ingredients
Chicken and Avocado Burgers
- 1 pack chicken breast steaks
- 1 tablespoon burger spice mix
- 6 seeded burger buns, cut in half
- 1 avocado
Apple Slaw
- ¼ cabbage, finely shredded until you have 3 cups worth
- 1 carrot, grated
- 1 apple, cut into matchsticks
- 1 sachet chipotle sauce
- 3 tablespoons mayonnaise
- 2 tablespoons roughly chopped coriander leaves and stalks

Preheat oven to 220°C. Line an oven tray with baking paper. Preheat BBQ hot plate or grill to high (if using). Heat a large fry-pan on high heat. Pat chicken dry and toss with burger spice mix and a drizzle of oil. Season with salt and pepper. Cook for 3-4 minutes each side, or until cooked through. Set aside, covered, to rest for 2 minutes.

Place burger buns, closed, on prepared tray and toast for about 5 minutes, until golden and warm.

Toss all apple slaw ingredients together in a large bowl. Season to taste with salt and pepper and set aside.

Cut avocado in half lengthways and twist halves to separate. Remove stone using a spoon and scoop out flesh. Slice avocado flesh 1cm and set aside.

To serve, place a chicken breast steak on the bottom half of each burger bun and top with some apple slaw and avocado. Serve remining apple slaw on the side.
