Pork Fried Rice

To save on time, cook the rice the day before, cool quickly and store in an airtight container in the fridge.


Ingredients

Pork Fried Rice

  • ½ cup jasmine rice
  • ½ cup water
  • Pinch of salt
  • 1 egg
  • ½ red onion, finely diced
  • 150g pork mince
  • 1 clove garlic, minced
  • 1 tablespoon soy sauce
  • ½ carrot, grated
  • ½ leek, thinly sliced
  • ½ cup frozen peas
  • 1 pottle honey soy dressing

To Serve

  • 1½ tablespoons picked coriander leaves
  • Drizzle of soy sauce (optional)

Steps

  1. Combine rice, water and salt in a small pot and bring to the boil. As soon as it boils, cover with a lid and reduce to lowest heat to cook for 12 minutes. Turn off heat and leave to steam, covered, for a further 8 minutes. Do not lift lid during cooking. Spread rice on a tray to cool slightly.
  2. While rice is cooking, heat a drizzle of oil in a medium fry-pan on medium-high heat. Whisk egg with a pinch of salt in a small bowl. Pour egg mixture into pan and cook for about 1 minute, until set. When eggs have finished cooking, transfer to a board or plate, roll up and thinly slice then set aside.
  3. Return pan to medium-high heat, add a drizzle of oil and cook onion for 1-2 minutes, until softened. Add mince, garlic and soy sauce and cook, breaking up mince with a wooden spoon, for 4-5 minutes, until cooked through. Remove from pan and set aside in a small bowl.
  4. Return pan to medium-high heat with a drizzle of oil. Stir-fry carrot, leek and peas for 2-3 minutes. Remove from pan and add to bowl with mince.
  5. Reduce heat to low-medium. Add cooked rice and honey soy dressing to pan and stir-fry for 1 minute. Return mince and veggies to pan and toss to combine. Alternatively, add stir-fried rice to bowl with cooked mince and veggies and stir to combine.
  6. To serve, spoon pork fried rice into a bowl and top with sliced egg. Garnish with coriander leaves and drizzle over extra soy sauce, if desired.
