Asian Chicken Noodle Stir-Fry

For fussier foodies, leave keep some chicken, veggies and noodles plain. If the sauce gets too thick, add a little water.


Ingredients

Asian Chicken Noodle Stir-Fry

  • 3 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • ½ cup water
  • 1 tablespoon sesame oil
  • 2 teaspoons rice wine vinegar
  • 1 teaspoon finely grated ginger
  • 1 tablespoon cornflour, mixed with 1 tablespoon water
  • 550g chicken thighs
  • ½ red onion, cut into 1cm-thick wedges
  • 1 carrot, peeled and cut into thin matchsticks
  • 1 capsicum, core and seeds removed and sliced 1cm
  • 1 head broccoli, cut into small florets
  • 350g fresh noodles

To Serve

  • 1 tablespoon sesame seeds

Steps

  1. Bring a full kettle to the boil. Prepare your vegetables. In a medium pot, combine soy sauce, sugar, water, sesame oil, vinegar and ginger and bring to the boil. As soon as it boils, add cornflour/water mixture and simmer on low heat for 2-3 minutes, until sauce thickens slightly.
  2. While ginger soy dressing is simmering, pat chicken dry with paper towels and slice into 1-2cm-thick strips. Heat a drizzle of oil in large fry-pan or wok and cook chicken for 4–5 minutes, turning regularly, until browned and cooked through.
  3. Transfer cooked chicken to pot with ginger soy dressing, cover and set aside. Wipe pan clean with paper towels and return to high heat with a drizzle of oil.
  4. Stir-fry onion, carrot, capsicum and broccoli for about 4 minutes, until just tender.
  5. In a medium, heat-proof bowl, pour boiling water over noodles to cover. Use a fork to separate strands then drain immediately. Add noodles to pan with vegetables, along with cooked chicken and sauce. Toss to combine.
  6. To serve, divide Asian chicken noodle stir-fry between bowls and sprinkle over sesame seeds.
