Beef Kofta Kebabs with Kumara Chips, Salad and Hummonnaise

Use damp hands to help roll beef mince into kofta. Use tongs to help turn kofta when cooking. Keep some salad plain for fussier eaters. Alternatively, cook kofta on BBQ for 6-8 minutes, until browned on all sides and cooked through. Set aside, covered with foil, to rest for a few minutes.


Ingredients

Kumara Chips

  • 600g golden kumara, scrubbed and cut into 1cmthick chips
  • 1 teaspoon sumac (optional, adults)

Beef Kofta Kebabs

  • 550g beef mince
  • 1½ tablespoons beef kofta kebab spice mix
  • ¼ teaspoon salt
  • 10 bamboo skewers, soaked in water for 5 minutes

Salad

  • ½ teaspoon maple syrup or runny honey
  • 1½ teaspoons olive oil
  • Juice of ½ lemon
  • ½ punnet cherry tomatoes
  • ½ telegraph cucumber
  • ½ bag baby spinach leaves

Hummonnaise

  • 100g hummus
  • 1-2 tablespoons mayonnaise

Steps

  1. Preheat oven to 230°C. Line an oven tray with baking paper. Preheat BBQ hot plate or grill to medium-high heat (if using). Toss kumara on prepared tray with a drizzle of oil and sumac (if using). Season with salt and cook for about 20 minutes, until tender. Turn once during cooking.
  2. In a medium bowl, combine beef mince, beef kofta kebab spice mix and salt. Divide beef mixture into 10 equal portions and shape into 8cm-long sausages. Thread one sausage onto each skewer and set aside.
  3. Heat a drizzle of oil in a large fry-pan on mediumhigh heat. Cook kofta for 6-8 minutes, turning until cooked through and browned on all sides. Set aside, covered with foil, to rest for a few minutes.
  4. While kofta cook, mix maple syrup/honey, olive oil and lemon juice in a large bowl. Cut cherry tomatoes in half; cut cucumber in half lengthways then slice thinly; roughly chop spinach. Add all to bowl with dressing, toss to combine and season with salt and pepper.
  5. In a small bowl, mix hummus and mayonnaise until combined.
  6. To serve, divide kumara chips, beef kofta and salad between plates. Serve with a large dollop of hummonnaise on the side to dip your kofta and kumara chips in.
