Lamb Pizzas with Yoghurt and Salad

Keep some salad separate for fussy eaters. If your kids don’t like raw carrot you could cut into carrot sticks and roast in oven 15 minutes.


Ingredients

Lamb Pizzas

  • 3 pizza bases
  • 70g tomato paste
  • 2 tablespoons mild sweet chilli sauce
  • 2 tablespoons olive oil
  • 1½ cups grated cheese *
  • ½ capsicum, core and seeds removed and thinly sliced
  • 1 tomato, diced 1cm
  • 1 courgette, peeled into long, thin ribbons
  • 300g lamb rump steaks (at room temperature)
  • 2 teaspoons lamb spice mix
  • ¾ red onion, thinly sliced (optional, adults)

Salad

  • 1 baby cos lettuce
  • 1 carrot
  • 1 teaspoon vinegar (e.g. red wine, white wine)
  • 2 teaspoons olive oil

Yoghurt

  • 1 pottle natural yoghurt
  • 1 teaspoon mild sweet chilli sauce

Steps

  1. Preheat oven to 230°C. Preheat two oven trays (or pizza stones if you have them). Preheat BBQ hot plate or grill to high (if using). Lay two sheets of baking paper on a bench. Cut one pizza base in half and place one and a half bases on each sheet. In a small bowl, mix tomato paste, sweet chilli sauce and oil. Evenly spread tomato mixture over pizzas and sprinkle with cheese. Top pizzas with capsicum, tomato and courgette.
  2. Carefully lift up baking paper with pizzas on top and place on to preheated trays then carefully slide baking paper away (use a fish slice to help with this). Cook pizzas for 12-14 minutes, until cheese melts and bases are crispy. Swap trays halfway to ensure even cooking.
  3. While pizzas are cooking, heat a drizzle of oil in a large fry-pan on high heat. Pat lamb dry with paper towels, toss with lamb spice mix and season with salt. Cook for 2-3 minutes each side for medium (depending on thickness), or until cooked to your liking. Set aside, covered in foil, for about 5 minutes before slicing thinly.
  4. Keep pan on heat and reduce heat to medium. Cook onion (if using) in lamb juices for about 4 minutes, until soft then set aside. While onion cooks, thinly slice lettuce and peel and grate carrot. Add both to a bowl and toss with vinegar and olive oil. Season to taste with salt and pepper.
  5. Mix yoghurt and sweet chilli sauce in a small bowl and set aside. Scatter sliced lamb and cooked onions (if using) over pizzas and drizzle over sweet chilli yoghurt.
  6. To serve, slice each whole lamb pizza into 6-8 pieces and each half pizza ino 3-4 pieces and divide between plates. Serve salad on the side.
