Beef and Sesame Roasted Kumara

Ingredients

SESAME ROASTED KUMARA

  • 100g orange kumara, scrubbed and diced 1-2cm ½ teaspoon sesame oil, for roasting (or use spray oil) ▲
  • ½ teaspoon veggie spice
  • 1-2 teaspoons sesame seeds
  • Pinch of chilli flakes (optional)
  • 1/3 bag baby spinach leaves

TOMATO AND EDAMAME SALSA

  • ¼ cup frozen, shelled edamame beans
  • 1 tomato
  • 1 tablespoon parsley leaves and stalks
  • 1 tablespoon finely diced red onion (optional)
  • ¼ teaspoon balsamic vinegar
  • Zest and juice of ¼ lemon
  • ¼ teaspoon extra-virgin olive oil

BEEF BISTRO STEAK

  • 140g lean beef bistro steak, any fat trimmed (at room temperature)
  • Spray oil

Steps

  1. Preheat oven to 200°C. Line an oven tray with baking paper. Bring a half full kettle to the boil. Preheat BBQ grill to high (if using). Toss kumara on prepared tray with sesame oil and veggie spice and season. Roast for 20 minutes, turning once. After 20 minutes, sprinkle sesame seeds and chilli flakes (if using) over kumara and carefully toss. Roast for 3-4 minutes, until kumara is lightly golden and sesame seeds are toasted.
  2. While kumara roasts, place edamame in a medium, heat-proof bowl and cover with boiling water. Cover and leave for 1-2 minutes, until bright green and tender then drain and refresh under cold water. Drain well.
  3. Make salsa. Dice tomato 1cm and roughly chop parsley. Add both to bowl with drained edamame, along with all remaining salsa ingredients. Mix to combine, season to taste with salt and pepper and set aside.
  4. Heat a small, dry fry-pan on high heat. Pat beef dry with paper towels, spray with oil and season. Cook for 3-4 minutes each side for medium (depending on thickness), or until cooked to your liking (or use BBQ). Set aside, covered with foil, to rest for about 5 minutes before slicing thinly against the grain, reserving any resting juices.
  5. Place spinach in a medium bowl. Toss through cooked kumara, slices of beef and half of the tomato and edamame salsa. Season to taste with salt and pepper.
  6. TO SERVE place sesame roasted kumara with beef onto a plate. Drizzle with beef resting juices (if desired). Spoon over remaining tomato and edamame salsa.
