Balanced Chipotle Pork Burrito Bowl with Sour Cream

This wholesome bowl features succulent chipotle-infused pork mince, delivering a protein-packed punch that will keep you fuelled and satisfied. Complete with a classic slaw and don’t forget a dollop of sour cream!


Ingredients

Rice

  • 300g brown rice

Pork

  • 1 brown onion, finely diced
  • 2 carrot, grated
  • 1 drizzle of oil
  • 600g free farmed pork mince
  • 2 pack taco 'bout flavour Mexican spices
  • 60g tomato paste
  • 50g chipotle sauce
  • 1 1/2 cup chicken stock

Slaw

  • 350g slaw
  • 50g baby spinach
  • 2 Tbsp vinegar
  • 1/4 tsp sugar

To Serve

  • 125g sour cream
  • 25g chipotle sauce
  • 3/4 tsp garlic chilli blend, optional

Steps

  1. Bring a pot of unsalted water to the boil (brown rice needs plenty of water, so be sure to fill your pot). Add rice to pot of boiling water. Boil, uncovered, for 25-30 mins, until grains are tender. Drain well through a sieve.
  2. Finely dice onion and grate carrot. Heat oil in a frypan on high. Cook onion and carrot for about 3 mins, until softened. Add pork with a pinch of salt and cook for 7 mins, breaking up with a wooden spoon, until browned. Add measure of spices and tomato paste and cook another 1 min, until fragrant. Add first measure of chipotle sauce and stock, drop heat to low and simmer for about 3 mins, until thickened and reduced. Season to taste with salt and pepper.
  3. Toss all slaw ingredients together in a bowl. Season with salt.
  4. Build your burrito bowl with rice, pork and slaw. Dollop with sour cream, drizzle over remaining chipotle sauce and sprinkle over chilli flakes (if you like it spicy). Enjoy!
