Ingredients

Carrots

  • 500g snacking carrots, cut in half lengthways
  • 1/2 pack dukkah
  • 1 tsp oil

Tabbouleh

  • 150g bulgur wheat
  • 1/2 pack turmeric powder
  • 1 broccoli, finely chopped
  • 100g grapes, cut in half
  • 100g baby spinach
  • 1 Tbsp red wine vinegar

Falafel

  • 1 tsp oil
  • 400g falafel

To Serve

  • 100g garlic tofu sauce
  • 1 bunch mint

Steps

  1. Preheat oven to 220°C (or 200°C fan bake). Bring a pot of hot salted water to the boil with a lid on.
  2. Cut carrots in half lengthways. Toss on a lined oven tray with measure of dukkah and oil. Season with salt and pepper and roast on upper oven rack for about 20 minutes, until tender.
  3. Add bulgur and measure of turmeric powder to pot of boiling salted water. Cook on high heat for 10-12 minutes, until grains are tender. Meanwhile, finely chop broccoli. Cut grapes in half and set aside separately.
  4. Once bulgur is tender, add broccoli to pot and cook for a further 1-2 minutes, until tender. Drain and set aside in a sieve for a few minutes to drain well. Once drained, return to pot. Add remaining tabbouleh ingredients and toss together. Season to taste with salt and pepper.
  5. Heat oil in a frypan on medium-high heat. Cook falafel for 2-3 minutes each side, until golden and cooked through.
  6. Plate tabbouleh topped with carrots, falafel, garlic tofu sauce and mint leaves.
