Slow Cooker Asian-Style Pork with Sesame & Udon Noodles

Slow cooker Asian-style pork noodles are a fabulous prep-it-and-forget-it meal. Put it on before work and you'll be greeted with fragrant Asian flavours filling your kitchen when you get home. Serve up brothy bowls of tender shredded pork, complete with udon noodles, greens and sesame. It couldn’t be easier!
Ingredients
Pork
- 800g pork scotch
- 1 Tbsp ginger, finely grated
- 30g garlic paste
- 1 pack 5 spice stock spices
- 2 cup chicken stock
- 1 cup water
- 2 Tbsp soy sauce
Noodles
- 1 twin pack baby bok choy, leaves separated
- 1 broccoli, cut into small florets
- 1 pack udon noodles
- 200g julienned carrot
To Serve
- 2 tsp sesame oil
- 1 pack sesame seeds
- 1 pinch of chilli flakes, optional

Pat pork dry, place in either a slow cooker or casserole dish, depending on which method you are using. Season with salt. Finely grate ginger.

Add all pork ingredients to slow cooker. Slow cook on low for about 8-10 hrs, or until tender. Pork will easily pull apart when ready.

Alternatively, if you don’t have a slow cooker, preheat oven to 200°C (180°C fan bake). Add all pork ingredients to casserole dish. Cover and cook for about 2 1/2 hrs or until cooked through. Pork will easily pull apart when ready.

When pork has 30 mins cook time remaining, boil a pot of salted water. Separate bok choy leaves. Cut broccoli into small florets Add noodles and broccoli to pot of boiling water, stir, cover and cook on high heat for 3-4 mins, until tender. Add bok choy and drain well and return to pot.

Once cooked, remove pork from cooking liquid and add to a bowl. Using 2 forks, roughly pull into bite-sized pieces. Return to dish with cooking liquid.

Fill bowls with noodles and veggies and top with pork, broth and julienned carrot. Drizzle with sesame oil and sprinkle over sesame seeds and chilli flakes (if using). Dig in!
