Lamb Kofta with Pumpkin and Chickpea Salad

Alternatively, cook kofta on the BBQ for about 4 minutes each side, until cooked through.


Ingredients

Pumpkin and Chickpea Salad

  • 500g peeled pumpkin, diced 1.5cm
  • 2 teaspoons chickpea spices
  • 1 can chickpeas, drained and rinsed
  • 1 tablespoon GF flour
  • ½ bag baby spinach *

Lamb Kofta

  • 1 carrot
  • 450g lamb mince
  • 1 tablespoon Greek spice mix
  • 1-2 tablespoons chopped mint leaves
  • 1 egg
  • ½ teaspoon salt
  • 2 teaspoons GF tomato sauce

Raita

  • ½ telegraph cucumber
  • ½-1 clove garlic, minced
  • Zest and juice of ½ lemon
  • 150g yoghurt
  • ½ teaspoon honey
  • 1 tablespoon chopped mint leaves

To Serve

  • ½ lemon, cut into wedges (optional)

Steps

  1. Preheat oven to 230°C. Line an oven tray with baking paper. Preheat BBQ hot plate to medium-high (if using). Toss pumpkin and chickpea spices with a drizzle of oil on prepared tray and season with salt and pepper. Roast for 10 minutes to start with.
  2. Toss chickpeas with flour in a shallow bowl and season. After pumpkin has been cooking for 10 minutes, scatter over pumpkin and return to oven for about 15 minutes, until browned.
  3. While pumpkin cooks, prepare kofta. Grate carrot and add to a large bowl with all remaining lamb kofta ingredients. Mix together well using clean hands. Dampen hands and use a ¼ cup measure to shape into balls, then flatten to 1cm-thick patties. Damp hands will make kofta easier to shape.
  4. Heat a drizzle of oil in a large, fry-pan on medium-high heat. Cook kofta for 4-5 minutes each side, or until cooked through.
  5. While kofta cook, grate cucumber and use hands to squeeze out any extra liquid. Mix with all remaining raita ingredients in a small bowl. Season just before serving. Toss spinach through cooked pumpkin and chickpeas.
  6. To serve, divide pumpkin and chickpea salad between plates and top with lamb kofta. Drizzle with raita. Squeeze over a wedge of lemon, if desired.
