Slow Cooker Beef Rogan Josh with Garlic Naan & Basmati Rice

Let your slow cooker do all the work with our version of rogan josh, a type of Indian curry known for its thick, flavourful red sauce and tender meat. Paired with fluffy garlic naan and rice to sop up every last drop.


Ingredients

Beef

  • 1/2 brown onion, diced
  • 1 garlic clove, minced
  • 1/2 Tbsp ginger, finely grated
  • 300g diced beef chuck steak
  • 1/4 tsp salt
  • 2 Tbsp rogan josh paste
  • 1/4 cup beef stock
  • 250g tomato passata
  • 50g baby spinach

Rice

  • 1 carrot, grated
  • 1/2 Tbsp butter
  • 150g basmati rice
  • 1 1/8 cup boiling water

To Serve

  • 1/2 pack garlic naan
  • 50g yoghurt

Steps

  1. Dice onion. Mince garlic. Finely grate ginger. Place beef and all remaining beef ingredients (except spinach) in a slow cooker or casserole dish (choose one based on which method you are using). Season with salt.
  2. Slow cook on low for about 8-10 hrs or until tender. Beef will easily pull apart when ready. Just before serving, toss spinach through beef, until wilted. Season to taste with salt.
  3. Alternatively, if you don't have a slow cooker, preheat oven to 180°C (or 160°C fan bake). Cover and cook for about 2 1/2 hrs, or until tender. Just before serving, toss spinach through beef, until wilted. Season to taste with salt.
  4. When beef has 30 mins remaining, cook rice. Boil a full kettle. Grate carrot. Melt butter in a pot on medium-high. Cook carrot for about 3 mins, until softened. Add rice and cook for 1 min. Add boiling water measure and a pinch of salt to pot. Cover with lid and bring to the boil. Drop to lowest heat and cook for 12 mins. Turn heat off, leave lid on and steam for 5 mins.
  5. Place 1-2 garlic naan on a heatproof plate. Microwave for 30 secs, until warm. Repeat with any remaining naan.
  6. Fill bowls with rice and top with beef rogan josh. Serve garlic naan on the side and drizzle over yoghurt. Enjoy!
