Bacon Bake with Potato Salad

Keep spinach and capsicum separate from potato salad and just dress salad with 1 tablespoon of mayo for fussy eaters. We’re sure they’ll still love the bacon in there.


Ingredients

Bacon Bake

  • 6 eggs
  • ¼ cup olive oil
  • 1 cup flour
  • 1 teaspoon baking powder
  • ¾ teaspoon salt
  • 2 courgettes, grated
  • ½ brown onion, grated or finely diced
  • 200g bacon, diced 2cm
  • 1 cup grated cheese

Potato Salad

  • 50g bacon, diced 2cm
  • 400g waxy potatoes
  • 2 tablespoons mayonnaise
  • 1-2 teaspoons mustard (e.g. Dijon, wholegrain)
  • ½ bag baby spinach
  • 1 capsicum

To Serve

  • ¼ cup tomato relish or sauce (optional)

Steps

  1. Preheat oven to 220°C. Grease a baking dish (measuring about 28 x 22cm). Line an oven tray with baking paper. Bring a medium pot of salted water to the boil. In a large bowl, whisk eggs, olive oil, flour, baking powder and salt until smooth. Fold through all remaining bacon bake ingredients, season with pepper and mix until combined.
  2. Pour into prepared baking dish and bake (on middle oven rack) for about 30 minutes, until set in the middle (insert a skewer or knife to test, it will come out clean when cooked through). Rotate dish halfway to ensure even cooking and allow to sit for 5 minutes when finished baking.
  3. Spread second measure of bacon on prepared tray and bake for about 15 minutes, until cooked and crispy. Set aside. While bacon and courgette bake is baking, prepare salad. Dice potatoes 2cm. Cook in pot of boiling water for about 12 minutes, until just tender. Drain and set aside.
  4. In a large bowl, combine mayonnaise and mustard until smooth. Roughly chop baby spinach leaves; dice capsicum1-2cm.
  5. Add all to large bowl with dressing, along with cooked potatoes and bacon. Season to taste and toss gently to combine. Slice bacon bake into pieces.
  6. To serve, divide bacon bake between plates. Serve potato salad on the side and top with a dollop of your favourite tomato relish or sauce (if using).
