with kumara salad and chipotle slaw
Ingredients
ROASTED KUMARA
- 100g orange kumara and diced 2cm
- Spray oil
CHIPOTLE SLAW
- ¼ beetroot
- A few pieces of thinly sliced red onion
- 1 cup ranchslaw
- ½ teaspoon chipotle sauce
- ¼ teaspoon vinegar (e.g red wine, white wine, cider)
- 2 tablespoons yoghurt
BEEF PATTIES
- ¼ brown onion
- 125g lean ground beef
- ½ teaspoon cornflour
- ¾ teaspoon burger spice mix
- Pinch of salt
- Spray oil
TO SERVE
- 2 iceberg lettuce leaves, separated
- 2 teaspoons yoghurt

Preheat oven to 220°C. Line an oven tray with baking paper. Preheat BBQ grill or hot plate to medium-high (if using). Place kumara on prepared tray, spray with oil and season. Roast for about 20 minutes, until kumara is tender and golden. Turn once during cooking.

While kumara cooks, grate beetroot into a medium bowl. Add all remaining chipotle slaw ingredients to bowl with beetroot, toss to combine and season.

Combine all patty ingredients (except oil) in a small bowl. Use clean hands to mix well. Divide beef mixture into two portions, shape then flatten into patties, about 0.5cm-1cm thick.

Heat a medium, dry fry-pan on medium-high heat then spray with oil. Cook patties for 2-3 minutes each side, until cooked through (or use BBQ). Set aside to rest, covered, for a few minutes.

TO SERVE lay lettuce leaves out onto a plate. Top each leaf with a beef patty, some chipotle slaw and a dollop of yoghurt. Serve roasted kumara and any remaining chipotle slaw on the side.
