Thai Beef Salad with Crispy Noodles and Jasmine Rice

Alternatively, cook beef on BBQ grill for 2-3 minutes each side for medium (depending on thickness), or until cooked to your liking.


Ingredients

Jasmine Rice

  • 2 cups jasmine rice
  • 3 cups water

Thai Dressing

  • 2 tablespoons sweet chilli sauce
  • 2 teaspoons soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon olive oil
  • 2 teaspoons sesame oil
  • 3 tablespoons chopped coriander leaves and stalks
  • 3 tablespoons chopped mint leaves

Beef Salad

  • 600g beef rump steaks (at room temperature)
  • 1 capsicum
  • ½ iceberg lettuce
  • ½ red onion
  • ½ telegraph cucumber
  • 1 carrot

To Serve

  • 100g crispy noodles

Steps

  1. Preheat BBQ grill to high (if using). Prepare herbs. Combine rice, water and a pinch of salt in a medium pot and bring to the boil. As soon as it boils, cover with a tight-fitting lid and reduce to lowest heat to cook for 12 minutes. Turn off heat and leave to steam, still covered, for a further 8 minutes. Do not lift lid during cooking.
  2. Whisk together all Thai dressing ingredients in a shallow bowl and set aside.
  3. Pat beef dry and season. When rice is steaming, heat a drizzle of oil in a large fry-pan on high heat. Cook beef for 2-3 minutes each side for medium (depending on thickness), or until cooked to your liking. Set aside, covered to rest for 5 minutes.
  4. While beef cooks, thinly slice capsicum, lettuce, red onion and cucumber and grate carrot. Place in a large bowl and set aside.
  5. Once beef has rested, slice thinly against the grain and toss with remaining beef salad ingredients, along with Thai dressing and any resting juices, if desired. Season to taste.
  6. To serve, place ¾ cup jasmine rice into each bowl and top with plenty of Thai beef salad and a small handful of crispy noodles.
