Chicken Ras El Hanout

Ingredients

CHICKEN RAS EL HANOUT

  • 550g chicken breasts
  • 1-1½ tablespoons ras el hanout
  • 2 teaspoons oil, for cooking (or use spray oil)

ROASTED VEGETABLES

  • 1 cauliflower, stalk and florets diced 2cm until you have 4 cups worth
  • 1 teaspoon cauli spice mix
  • 2 teaspoons oil for cooking (or use spray oil)
  • 1 tablespoon water
  • 2 carrots, quartered lengthways and cut in thirds (cut any larger pieces in half again lengthways)
  • ½ teaspoon salt
  • 25g sliced almonds
  • 20g chopped dates

LENTIL SALAD

  • 1 teaspoon extra-virgin olive oil
  • ¾ teaspoon honey
  • Zest of ½ lemon
  • Juice of 1 lemon
  • 1 can brown lentils, drained, rinsed and drained well
  • 1/3 bag baby silverbeet
  • ¼ red onion, thinly sliced

TO SERVE

  • 50g feta cheese

Steps

  1. Preheat oven to 230°C. Line two oven trays with baking paper. Preheat BBQ grill or hot plate to high (if using). Prepare roasted vegetables and lentil salad ingredients. Pat chicken dry and cut breasts in half lengthways, until all pieces are roughly the same size. Combine in a bowl with all remaining chicken ras el hanout ingredients. Toss to coat and season. Place on prepared tray and roast for 14-16 minutes until cooked through. Set aside, covered, to rest.
  2. Toss all roasted vegetable ingredients (except almonds and dates) on second prepared tray and roast on rack below chicken for about 12 minutes. Remove tray from oven, sprinkle almonds and dates over vegetables and continue to roast for 3-4 minutes until vegetables are golden and tender. Set aside covered.
  3. While chicken and vegetables are roasting, whisk oil, honey and lemon zest and juice together in a large bowl. Add remaining lentil salad ingredients, toss well to combine and season to taste.
  4. Season chicken with salt, then thinly slice and reserve resting juices.
  5. TO SERVE share lentil salad between plates and top with ras el hanout chicken. Top with roasted vegetables, crumble over feta and drizzle over resting juices if desired.
