Chicken Jungle Curry

Ingredients
CHICKEN JUNGLE CURRY
- 1 teaspoon oil, for cooking (or use spray oil)
- ½ brown onion, thinly sliced
- 1 pottle jungle paste
- 275g diced chicken breast
- 1 cup lite coconut milk
- 125g frozen peas
- ½ courgette, cut in half lengthways and thinly sliced
- 1 baby bok choy, end trimmed and thinly sliced
SUPER GREEN VERMICELLI
- 100g mung bean vermicelli
- ½ bunch broccolini, florets and stalks roughly chopped
- Pinch of salt
TO SERVE
- 2-3 tablespoons coriander leaves and stalks, finely chopped

Bring a full kettle to the boil. Prepare vegetables. Heat oil in a medium fry-pan on medium-high heat. Cook onion with a pinch of salt for 1-2 minutes,until starting to soften. Add jungle paste and cook for about 30 seconds, stirring, until fragrant.

Pat chicken dry, add to pan along with coconut milk, stir to combine and bring to a simmer. Reduce heat to medium and cook for 6-7 minutes, until chicken is just cooked through. Stir occasionally.

While curry cooks, prepare rest of the meal. Place mung bean vermicelli and broccoli in a heat-proof bowl and cover with boiling water. Add salt, cover with a plate and leave for 5-6 minutes, until vermicelli is tender and broccolini are bright green. Drain well then remove half the vermicelli (this is leftover). Use kitchen scissors to cut in a few places to make them easier to eat. Season to taste and toss together.

Once the chicken has cooked, add peas and courgette to pan. Continue to cook for 2-3 minutes, until peas are bright green and courgette is tender. Stir through bok choy and cook for 30 seconds to wilt. Season curry to taste.

TO SERVE divide super green vermicelli between bowls. Top with chicken jungle curry and sprinkle over coriander.
