Perfect for a cosy night in or a hearty meal after a long day, this sticky BBQ beef bowl is a must-try for any foodie, adult or kid looking for a satisfying and flavourful dish.
Ingredients
Garlic Rice
- 2 garlic clove, minced
- 2 Tbsp butter
- 300g jasmine rice
- 2 1/4 cup boiling water
- 2 cup frozen corn
Beef
- 1 drizzle of oil
- 600g beef mince
- 1 pack BBQ master's choice blend
- 1/2 tsp salt
- 100g BBQ sauce
To Serve
- 2 carrot, grated
- 90g Colby cheese, grated
- 1 twin pack baby cos lettuce, shredded
- 125g sour cream

Bring a kettle to the boil.

Mince garlic. Melt butter in a pot on medium-high heat and cook garlic for 1 minute. Add rice, boiling water measure, corn and a pinch of salt in a pot and bring to the boil with the lid on. Once boiling, reduce to lowest heat to cook for 12 minutes. Turn off heat and steam, covered, for 5 more minutes. Do not lift lid during cooking.

Heat oil in a frypan on medium-high heat. Add beef, measure of spices and salt measure and cook for about 10 minutes, stirring frequently to break up beef, until brown and starting to go crispy. Remove from heat and stir through BBQ sauce.

While beef cooks, grate carrot and cheese for serving. Shred lettuce.

Spoon rice into bowls with beef, lettuce and carrot. Sprinkle over grated cheese and dollop sour cream.
